Here is a really easy recipe for a casserole. I dont like mushrooms, celery or sour cream -haha- but this is soo good :) However, this is a pretty simple (read: bland) recipe so I would encourage you to add in your own spices and personal touch! I like to throw some tarragon in the mix sometimes. Also, I have served this with a side of green beans or asparagus in the past. Ok, lets get to it....
Chicken Poppyseed
6-8 boneless skinless chicken breasts
1 can cream of mushroom soup
1 can cream of celery soup
6 oz sour cream
¼ cup slivered almonds
2 tbsp poppyseed
1 sleeve saltine crackers (crushed)
1 stick butter
Cut chicken in bite size pieces and cook. Put cooked chicken in large bowl and add 2 cans of soup, sour cream and almonds. Pour this into greased pyrex dish. Melt stick of butter in microwave. After it is melted, add 1 tbsp of poppyseed and crushed sleeve of crackers. Add this on top and sprinkle the rest of the poppyseed. Put in oven uncovered at 350 for 20 min or until crackers are golden brown.
